Cheese a tasty treat for the angler but also a tasty meal for a fish. If you are fishing for predators then unless they have vegetarian tendancies cheese is not an effective bait. However all other species of fish will possibly fall to a nice bit of cheese. Cheese is overlooked as a bait but on reflection a pound of cheese is cheaper than a pint of maggots and cheese attracts a better quality of fish too. And if there is any left and you are feeling peckish then you can eat the rest.
In the case of cheese freshness is not the issue you want smell so old cheese is probably best as this will have a well developed smell which attract the fish.
The Tactics of Cheese
Cheese attracts fish in numbers but one tactic that the angler can employ is to take the cheese to the fish. Use stealth and walk the bank to find a likely spot and then deploy the cheese. Summer tactics for cheese drop your cheese near to the bank or along the edge of weed beds and you can tempt the fish out to bite. In winter cheese comes into its own the water is coloured and the smell comes into play. Here because the fish tend to be at the bottom of the water fishing then try the deeper pools away from the faster flowing river.

Smelly Cheese
As fish have an excellent sense of smell it therefore follows that a good smelly cheese will make the best bait. Therefore a nice stilton or a danish blue are preferable. In winter where the waters are coloured and fish sight is not a consideration smell comes in to play. So the smellier the cheese the better. Another good smelly cheese is parmesan and when added to ground baits and paste baits then this is another effective cheesy fish magnet.
